Orange filled Cake

3 cups flour

3/4 tsp salt

3 1/2 tsp baking powder

grated rind of one orange

1 1/2 cups sugar

3/4 cup butter

3 eggs

1/2 cup orange juice

1/2 cup water

2 Tbs lemon juice

 

Use the standard cake method: Sift dry ingredients together and set aside. Beat butter and sugar together, then beat in eggs until creamy; add orange peel. Mix all liquid together. Blend flour and liquid mixtures into the butter mixture alternately beating until smooth. Pour batter into a 9 x 13 inch pan and bake for 40 min at 375 degrees F.

 


Sharon Holdner, an ESL instructor and former chocolate shop owner, shares her recipe for "I Love Chocolate's" signature brownies. The secret is in the ground pecans and lack of flour.

 

Chocolate Brownies

1 cup melted unsalted butter

1 ½ cup of white sugar

1 ½ tsp vanilla

3 separated (room temperature large eggs). Beat the egg whites w

cream of tartar until stiff, set aside.

2/3 cup of cocoa powder (Valrhona or Lake Champlain)

1/2 cup all purpose flour

3 tbsp water

3/4 cup finely ground pecans

1/8 tsp cream of tartar

1/8 tsp salt

 

Mix butter, sugar and vanilla together well.

 

Add egg yolks, cocoa powder, flour, water and ground pecans. Mix

well.

 

Gently fold beaten egg whites into batter.

 

Spoon batter into a 9" spring pan and bake for 45 minutes at

350 degrees or use 6 small heart shaped pans and bake for 20 minutes.

 

Dust with powdered sugar when cool.


Teresa d'Eca Almeida is one of the BaW group founders and moderators. An aficionada of codfish, here she shares a favorite recipe using this popular oceanic resident.

Oven-baked codfish    (Bacalhau assado no forno)

Serves 4 people

 

2 pieces cod (big type)

3-4 garlic cloves

3 dl (= 1 1/4 cups) olive oil (virgin extra)

6-8 medium (new) potatoes

 

Soak the dried cod in water for 36 - 48 hours. Change the water at least twice a day. (I generally buy around 4 - 5 kilos of cod in pieces, soak it for 2 days, if it is the thick/high type, let it dry, and then freeze each piece in a separate bag.)

Thaw the cod for a few hours and place it in an ovenproof dish.

 

Wash the potatoes with the peel and cut them in halves or quarters. (You may peel and slice them if you prefer.) Then place them around the cod.

 

Slice the garlic cloves finely and spread over the cod.

 

Pour the olive oil over the cod and potatoes.

 

Place in the oven at 230º C for 35 - 40 minutes (until everything is light brown). Don't forget to pour the hot olive oil over the cod and potatoes twice during the baking process.
